When midterms are in full swing, so is my culinary prowess. It is my best procrastinator and my biggest relaxation strategy. During the chaos of graduate school it seems that I can barely find the time to check my e-mails, but I always have time to bake cookies in mid afternoon. Add to that that proper nutrition fuels the brain and energizes the body and you will understand why there have been a plethora of new recipes on the blog these past weeks (with more to come).
Today’s recipes arrives in Celebration of St. Patricks Day. To be honest I have never even put much thought into this holiday before, let alone celebrated. In St. Patricks Day’s prior you would find me doing little more than donning a green cardigan while teaching an Irish themed art project. However, New York takes it’s St. Patty’s day very, very seriously. As such I made time to get together with friends and enjoy the festivities. We ventured down into the madness that is Times Square, tucked ourselves into a warm, cozy booth in an Irish Pub and spent our time watching the parade, eating potato leek soup and sampling a variety of beers. Good times were definitely had, but its is hard not two when the afternoon is spent with two of my absolute favorite New Yorkers.
Afterward I polished off the evening with this homemade, hearty bowl of greens. So whether you are feeling thematic or in need something scrumptious to recover from your weekend of Irish induced debauchery -Enjoy.
So I am all about the bowls lately. We alas moved to a country that has Chipotle, and could not be happier with that life choice. Yes, I know Vancouver you got one just after we left but that still would have left it’s exceptional goodness a two hour boat ride with an additional hour drive away from our hearts and stomachs. So lately I have been recreating my own bowls in my kitchen, and here is another such bowl masterpiece. This one has both vegan and almost paleo versions for your culinary enjoyment. With the added bonus they are quick, and makes minimal mess during the prep process. So for us, who has seen Jay bounce around between different times zones 5 times in the last 10 days, while I have midterms looming in the way too near future, we welcomed a recipe that requires little hands on time and even litter clean up. The thing I miss most about the west coast is the seafood. Atlantic Salmon just doesn’t cut it. Shellfish is hard to score. Cheap sushi is non existent here, and even the pricier fare isn’t as tasty as back home. So last week I saw a photo on Pinterest of Salmon Tacos, and my taste buds started to tingle (actually). When I clicked through there was no recipe so I resolved myself to craft something that tastes as good as the Pinterest perfect photo looked. Then Pacific Salmon was in stock at Trader Joe’s and the rest is history. These, amazing, tasty, filling, simple, awesome, nutrient rich tacos were born. Enjoy first, and you can thank me later. It’s fall in the city, and it is chilly outside. So inside we Jordan’s are keeping it warm and cozy. Butternut Squash soup my favorite soup, and one of the best ways to stay toasty. For the longest time I never attempted it on my own because I had written it off as too complex and time consumptive. My mom also makes a killer butternut soup, that even still mine can’t hold a candle to. Although maybe that is just the sentimentality inside me speaking since I tend to whip up this soup on the days I miss her a little more than usual. Midterms have done an abundance for my culinary creativity. Instead of pouring over the books I have been brainstorming new recipes, and when that doesn’t suffice to distract me from what I should be doing I decide to test drive them in my kitchen. I have pleaded with Jay to keep me on track and dispel my procrastinating tendencies. He has been no help. He even went so far as to tell me that I didn’t know what the word meant because I had started studying 3 weeks prior for my exams. He did however sit down to quiz me, and then left me to my own devices to attempt a new soup. Perhaps I should be weary of the directional pull of his encouragement seeing as he reaps the rewards of my culinary pursuits in spades, but doesn’t shoulder the burden if I go into my tests unprepared. However, I am feeling good about the scholastic content and I am sure the nourishment from this thick, hearty soup will carry me the rest of the way. This rich, savory soup is as flavorful as it is healthy. Enjoy 🙂
As a new teacher you are in constant contact with sniffles, runny noses and grubby fingers, and unfortunately you don’t have the immune system of a veteran educator. So in any attempt to reduce the number of times I come down with a cold I have tried to be mindful of my nutrition and weave plenty of fresh ginger root, chili and garlic into my diet. Tonight I whipped up a nourishing and hearty carrot ginger soup with a hint of sweet from the Braeburn apples, which compliments spice of the turmeric perfectly. Now I am off to catch up with some amazing girlfriends over a movie and idle chat (while I secretly oggle her three beautiful children).
First and foremost my apologies for the quality of photo. Until my husband comes home and fixes our iMac I am left to suffer away snapping shots with my iPhone. However, photo quality aside this soup was just what the stomach asked for. I have been a little under the weather lately, and with Jay away in North Carolina on business my motivation to utilize my culinary prowess has been limited. So tonight I decided to change my attitude and use figured that a little homemade soup could heal what ails me. This vegan and paleo friendly bisque uses coconut milk instead of milk to give it a creamy depth and habanero peppers to give it a little bite. The result: Yum.
