Creamy (Vegan) Summer Squash Soup

The amazing people of CF NYC teamed up to tell the story of my accident and how Crossfit has made a major impact on my recovery. The very talented Mead Jackson (check her photography/videography out and then follow her on Instagram) and Steve Gardner (he is found here, and on insta too!) told my story in such a meaningful way that it brought me (and my mum) to tears. I couldn’t be happier with the outcome. This is a story I keep very close to my heart, and the talented creatives who filmed this video made me feel so comfortable bravely sharing my experience with the world. Now many of you know that food and cooking has been as pivotal in my recovery as physical fitness has been. To highlight this other important aspect of recovery and wellness, Mead came over to get some footage of me cooking. I made up the recipe on the spot during the filming with what I could get my hands on at the Fort Greene Farmers Market that very morning. It may have been a hodgepodge, super quick lunch but it did not disappoint!  So without further ado I give you not only the awesome video, but this really awesome, really simple vegan soup recipe! {Vegan + Paleo} Smoothie Bowls

My mom came to visit in December toting a hometown favourite, granola from Pure Vanilla Bakery & Cafe.  I have ample warm, fuzzy, soul-filling memories in their cafe; from coffee dates with my mom to sitting on their patio with three of my nearest, dearest education friends, dreaming about our futures. So their granola is a little taste of home every time.  I decided to flex some creative muscles in how to make the most of my coveted granola; yogurt and granola just isn’t good enough.  Instead I whipped some smoothie bowls, whcih were fast, simple and perfect.  They’re also whole 30, paleo and vegan approved. Quick, Vegan, Gluten-Free Vanilla Zoats

Jameson just started a new job with Johnson and Johnson (yay! go Jay!) and is back in full swing of constant travel.  On the nights he is out of town I take the opportunity to experiment with new vegan recipes.  Over the passing months I had been seeing a plethora of instagram posts of “Zoats” pop up in my feed and got curious. Now I must confess I don’t actually like oatmeal. What I do know it is an excellent source of fiber and trace minerals that aren’t commonly found in most foods but the struggle is real for me to eat it in any form but cookie form. So I figured I should step out of my comfort zone to try out Zoats (Zucchini+oatmeal) and see if I could wrap my palate around porridge. Turns out it isn’t terrible, was really quick to whip up, and kept me full. Best of all this vegan, gluten-free dish packs in a solid serving of veggies.  Give it a whirl and see what you think! Creamless Cream of Vegetable Soup

 We have been busy travelling, renovating, working and scheming.  New York City is always a rush, but it feels as if life whizzing by with even greater fervor in the last few months.  However, it is been all been the best kinds of busy. Our days have been brimming with birthday celebrations, weekend escapes, social events, holidays and long adventures. Tomorrow we set off with a few of our nearest and dearest for nine days in Costa Rica. We are living life and living it to the full. In the face of all the crazy, we are fulfilled and we are happy. That being said we have been mindful to take few moments to slow down and home cook some good, hearty fall meals. Vegan Red Lentil Peanut Stew

Jameson hasn’t stopped talking about this dish.  The recipe yielded us leftovers for day, and each afternoon I have recieved a text proclaiming its awesomeness beyond compare. It may be because lentils are a rad super food. They’re low in saturated fat, cholesterol and sodium. But high in protein (18 grams per cup of cooked lentil) and Iron.  Lentils are also an excellent source of fiber, folate, phosphorus, copper and manganese. But all that nutritional goodness aside, this stew is bar none. It is warm, rich and hearty making it the perfect autumn meal on a cold blustery day.  Enjoy! Sweet Potato, Cauliflower And Buffalo Chicken Casserole

 This is a fast, but flavorful Paleo meal for a busy work night. Vegan, No Bake Pumpkin Spice Balls

 This treat from our Canadian Thanksgiving has it all covered. They’re vegan. They’re paleo. They are gluten and dairy free. If you make them all with organic ingredients you can call them organic. This is a fast, simple, no guilt dessert or everyday fall treat. It also is right on the Pumpkin Spice trend. So enjoy being hip and healthy with these Pumpkin Spice Peanut Butter Balls.

Paleo Fish Taco Bowls

We have a serious amount of life happening right now.  Everything seems to be moving at rapid pace.  We are also sitting on the cusp of some potential monumental changes, or simply solidifying that everything in our little ecosystem will stay exactly the same for a touch longer.   But right now we wait, and while we wait I have been trying to keep busy.  Thus I have been cooking, baking and talking non-stop.   Which just means you reap the rewards of new recipes, such as this awesome Paleo (or vegan if you choose) dish.  Try using this recipe as your base and customize any way you like by throwing in any extra veggies laying around in your crisper (broccoli is pretty darn great).   Experiment, enjoy, but most importantly take advantage of the approaching warmer temperatures. Paleo Chicken, Lime and Avocado Soup

Simple, one pot dinners are my jam.  When we get home from the gym every night we are ravenous, and after we feast neither Jameson nor I have much ambition to tackle a lengthy clean up.  So I am always looking to create flavorful meals that adhere to our dietary preferences, and can be accomplished quickly and painlessly.  This soup meets all our lofty, stringent criteria.  Also, if you are like me and don’t eat meat you can skip the chicken all together- it will still be spectacular. Or if you reside in a household (like ours) with a mix of herbivores and carnivores, simply cook the chicken in a pan on the side and stir into the soup when you add in your avocado. Homemade Peanut Butter Supreme Quest-Style Protein Bars

It has been awhile since I brought you a new recipe. It isn’t that I haven’t been cooking. We have actually had countless dinner parties in the intervening time between food centric posts.  My culinary silence is merely due to the fact our life has been bananas, and I haven’t had the moments to sit down and pen out the meals we have concocted.  So I figured I should rectify the situation promptly and bring you a new, simple, no bake treat to enjoy!

For those of you who haven’t jumped on the fitness bandwagon yet,  it is the Crossit Open right now. Every Saturday the Comp team at CF NYC does their open workout publicly so spectators can come ogle at their impressive skills (and cuteness).  The team has been doing a secret santa for each other each week.   Before the weekend they draw names and each team member gets or makes something small for the person they drew.  This week Jay got our badass friend Kate, and since he was away all week I tackled prepping her gift.  I have an out of control addiction to Quest bars which my wallet feels in spades.  I have been seeing homemade versions Pinterest and figured this was the perfect opportunity to try my hand at them.  Unfortunately, the first couple recipes I tried didn’t quite work out- probably because protein power can be variable and finicky.  I wound up augmenting and combining a bunch of the recipes, and also looking at the ingredients list on Quest Bars (where I learned I can pronounce only a fraction of them) to create these pretty awesome bars.  The result were Quest-like protein bars that are not only Paleo but also comprised of ingredients that I can pronounce.
