Our friend Aaron arrives tonight to visit us for the weekend. Before trekking out Boston to pursue his dreams, all the boys use to spend nearly every evening in our apartment.  They always made sure to come just before dinner.  So I had to make sure I scrounged up a good, home cooked meal for his arrival. Creamless Cream of Vegetable Soup

 We have been busy travelling, renovating, working and scheming.  New York City is always a rush, but it feels as if life whizzing by with even greater fervor in the last few months.  However, it is been all been the best kinds of busy. Our days have been brimming with birthday celebrations, weekend escapes, social events, holidays and long adventures. Tomorrow we set off with a few of our nearest and dearest for nine days in Costa Rica. We are living life and living it to the full. In the face of all the crazy, we are fulfilled and we are happy. That being said we have been mindful to take few moments to slow down and home cook some good, hearty fall meals. We were A Mummy Too’s Recipe of the Week this week!

I joke with Jameson that by classification the Jordan Project is pretty much a childless mama blog. Here at the Jordan Project we talk education, life and food which would all be more coherent if only a little one was on the scene. That way we would would fit better into the blogging niche of “parent blog”.  However, although kids are somewhere in the future, we are happy until then to keep bringing you learning activities and healthy, fast eats that fit into anyone’s busy schedule regardless of their parental status. Because it seems that you guys are LOVING what you find here, and that is all the incentive we need to keep it up!

As it turns out that it isn’t just our educational resources turning heads this month, but our whole food centrist recipes too! You may recall that our Halloween Bingo and Sight Word Go Fish games were showcased round the web in the past two weeks. While our amazingly simple, incredibly flavorful  Paleo Chicken, Lime and Avocado Soup was picked as  A Mummy Too’s recipe of the week. Paleo Chicken, Lime and Avocado Soup

Simple, one pot dinners are my jam.  When we get home from the gym every night we are ravenous, and after we feast neither Jameson nor I have much ambition to tackle a lengthy clean up.  So I am always looking to create flavorful meals that adhere to our dietary preferences, and can be accomplished quickly and painlessly.  This soup meets all our lofty, stringent criteria.  Also, if you are like me and don’t eat meat you can skip the chicken all together- it will still be spectacular. Or if you reside in a household (like ours) with a mix of herbivores and carnivores, simply cook the chicken in a pan on the side and stir into the soup when you add in your avocado. Spicy Fajita Soup

Clearly I am on a culinary roll this week.  It is shocking what can be accomplished when I am facing of a daunting level of work, and thus in desperate need of a creative outlet. Today’s soup comes to you as an extra show of love for Jameson who has been so supportive and patient in the midst of all the crazy.  Even taking the time to walk me around the Upper West side until 10:30pm last night as I breathed in the fresh air, cleared my head and tried to let go of the day.  In the meal planning process I often tend to favor my dietary preferences, and rarely cook him anything with animal protein.  So on days when I am feeling extra thankful for the emotional, physical and mental resource he is for me day in and day out, I tend to plan meals that have him in mind.  What makes this soup extra special is that the chef can opt the meat in or out (or add it just to the carnivorous bowls at the end like we do), thus making it the perfect flex meal for differing palates and culinary restrictions.  Meat or meatless you will still get ample protein from the black beans and the flavor isn’t hindered in either version.  This is a substantial, hearty meal, so enjoy.  Continue reading “Spicy Fajita Soup”

Tomato Soup

Jay has returned to Canada (for the night)

This afternoon he set off for Montreal for work which means tonight he will spend his time snuggling Cotton (featured below. Just look at her sweet little hand on his neck. Isn’t he going to be a great Dad?!) and dineing with our friends the Stenbergs.  Whereas, I on the other hand am cooped up our apartment navigating the complex world of personal taxes, writing up educational assessment reports and reading journal article upon journal article.  It truly feels a like it has been a few days since I last came up for air.  I figured since I am miles away, in the wrong country and can’t be with Jay to relish the company tonight, I may as well still savor a good meal.  In the past I haven’t had much luck when it comes to tomato soups, as they often end up too bland or too runny.  However, this fragrant tomato soup changed all that.  No description would do this rich, flavorful soup justice. So I will merely leave it to you to test for yourself.

Hearty Chicken and Vegetable Soup

When Jay and I started planning our move to the states the first query from friends and family was about healthcare.  As in how were we going to tackle the starkly different system.  After our voyage home for the holidays, the plane ride left me with a burst blood vessel which turned into a painful but run of the mill ear infection that landed us in an NYC emerge late last Thursday night.  Now I should preface my detailing of our first healthcare encounter with that Jay and I are crazy fortunate to have spectacular health coverage through his company, which makes all the difference.

photoThe hospital and doctors were of similar quality to back home.  As far as atmosphere goes it was nice to have a private room to wait in rather than a curtained off quadrant of  bustling emergency department.  We did note a shorter wait time and an extra level of thoughtfulness on part of the  staff as they spent a touch more time with us that we have been used to.   To cement this feeling of extreme attention to care we even got a call the next day from Columbia health to check on us because the hospital had taken the time to call them to inform them one of their students was in the evening prior. However, the true free nature of the Canadian system is hard to beat, and the fact that it is universally free for every member of our society is not only wonderful but admirable.  The real concerns come for Americans who don’t have access to health care and can’t afford private coverage, which I think is where the heart of the debate truly lies.

At the end of the day the hospital in our neighborhood was great and we left well cared for.  Besides, the hospital even had a twitter account and they favorited my lobby room waiting tweet. So the way I see it is that is winning no matter how you swing it.

As for now, I am on the mend but Jay has picked up the flu complete with fever and chills. So in our household we are waiting out this snow storm by taking the time to nurture ourselves back to health by with a good books, a stream of Frasier episodes, hot baths and nutritious eats.  This is a healthy twist of a classic get well soon chicken soup.  If you are vegan or vegetarian you can simple skip the chicken and it will remaining equally as scrumptious and nutritious.  This is a hearty, savory filling meal that is perfect for a cold winters day or any time that you are feeling a little under the weather.  Enjoy. Creamy Coconut, Sweet Potato and Avocado Soup

Everyone in this city is fascinated with juicing (not the performance enhancing drugs), and we are frequently asked if we partake in such pleasures.  I  have a smoothie each morning for breakfast but I don’t think that would constitute me a juicer.  What we do in fact do though is make everything from scratch.  Be is hummus or salsa to pasta sauce or soup, we whip it without using extra sugars, oils or any manufactured additives and preservatives.  We eat whole foods, and make most of our meals in house so we don’t do anything to supplement our nutritional needs in terms of different diets and cleanses.  Tonight’s soup is one such example of this philosophy, which I shared with my lovely friend Madeline, as we caught up on the coming semester and our time over the holidays. Spicy Coconut Shrimp Bisque

Jay and I are unanimous -this may just be our favorite soup I have cooked to date.  We are days away from heading home for the holidays so I was in a use what is left in the fridge mindset with this creation.  This thick, rich, hearty soup was the perfect addition to a blissfully wonderful day in our first New York snowfall.  This savory gem may seem a little more labour intensive than most of my others since it is more than just a chop, boil, serve type of dish. But that extra time spent sautéing the shrimp is really, really worth it; I promise.  Even so the entire soup requires maybe 15 minutes of hands on time, and the reward you reap is exceptional. Sweet Butternut Squash Soup

It’s fall in the city, and it is chilly outside. So inside we Jordan’s are keeping it warm and cozy.  Butternut Squash soup my favorite soup, and one of the best ways to stay toasty.  For the longest time I never attempted it on my own because I had written it off as too complex and time consumptive.  My mom also makes a killer butternut soup, that even still mine can’t hold a candle to.  Although maybe that is just the sentimentality inside me speaking since I tend to whip up this soup on the days I miss her a little more than usual.  Nonetheless, this soup isn’t complicated and is actually pretty efficient to make.  A quick chop, boil and purée and you are set to serve.   Enjoy.
