{Vegan + Paleo} Smoothie Bowls

My mom came to visit in December toting a hometown favourite, granola from Pure Vanilla Bakery & Cafe.  I have ample warm, fuzzy, soul-filling memories in their cafe; from coffee dates with my mom to sitting on their patio with three of my nearest, dearest education friends, dreaming about our futures. So their granola is a little taste of home every time.  I decided to flex some creative muscles in how to make the most of my coveted granola; yogurt and granola just isn’t good enough.  Instead I whipped some smoothie bowls, whcih were fast, simple and perfect.  They’re also whole 30, paleo and vegan approved. Slow-Cooked Spiced Drinking Chocolate

 For me Christmas is cold-streets, bright lights and hot drinks. Creamless Cream of Vegetable Soup

 We have been busy travelling, renovating, working and scheming.  New York City is always a rush, but it feels as if life whizzing by with even greater fervor in the last few months.  However, it is been all been the best kinds of busy. Our days have been brimming with birthday celebrations, weekend escapes, social events, holidays and long adventures. Tomorrow we set off with a few of our nearest and dearest for nine days in Costa Rica. We are living life and living it to the full. In the face of all the crazy, we are fulfilled and we are happy. That being said we have been mindful to take few moments to slow down and home cook some good, hearty fall meals. Sweet Potato, Cauliflower And Buffalo Chicken Casserole

 This is a fast, but flavorful Paleo meal for a busy work night. Paleo Coconut Macaroons

 I have mentioned again and again that life has been active for us these past number of weeks, resulting in an upswing of baking and cooking to calm my buzzing mind.  Work has been especially busy in the most wonderfully, engaging, dynamic way.  However, one of my amazing, spectacular colleagues is not only in the midst of our normal 9-5 routine but happened to also be smack in middle of hell week (the week preceding a show opening) for a musical she is producing.  There isn’t much I can do to share her load. However, the one thing I know how to do well is prepare food, and I have learned from experience that cookies quell a whole myriad of woes.  So with her in mind I began to adapt the traditional coconut macaroons to concoct this truly paleo, gluten-free version. Now for the most part my food is not the least bit Pinterest worthy. I focus more on the use of simple, whole foods rather than my photog and photoshop skills.  So needless to say I was a touch excited when these gems turned out to be perfectly pretty little domes. Paleo Fish Taco Bowls

We have a serious amount of life happening right now.  Everything seems to be moving at rapid pace.  We are also sitting on the cusp of some potential monumental changes, or simply solidifying that everything in our little ecosystem will stay exactly the same for a touch longer.   But right now we wait, and while we wait I have been trying to keep busy.  Thus I have been cooking, baking and talking non-stop.   Which just means you reap the rewards of new recipes, such as this awesome Paleo (or vegan if you choose) dish.  Try using this recipe as your base and customize any way you like by throwing in any extra veggies laying around in your crisper (broccoli is pretty darn great).   Experiment, enjoy, but most importantly take advantage of the approaching warmer temperatures. Vegetarian Quinoa Enchilada Bake

We were fortunate enough to have Jameson’s amazing brother and sister-in-law come spend a week with us awhile back.  We had such a blast exploring our city, relaxing and just plain talking with them.  By getting hitched and combining our families have Jay and I have amassed an incredible, dynamic, ragtag group of exceptional family members.  We may have one of the largest immediate families in the history of mankind but we wouldn’t change it for the world. We so enjoy and cherish every second we have with any member of our brood.  So having Eton and Angela here with us to experience how we do our Brooklyn lifestyle was such a joy.

We ate out a little, but we ate in a lot because I seriously love having new taste buds to impress.  This Vegetarian Quinoa Enchilada Bake Quinoa  (with meat options to appease my carnivorous brother-in-law) was a hit and had Ange asking for the recipe as a souvenir.  I figured I shouldn’t keep the dish just to the family, but spread the love around.  Lately with our hectic schedules, we Jordan’s are all about this dish because it requires little prep, virtually no mess and leaves us leftovers for days.  It is the perfect, filling meal for the evenings when you need something quick but don’t have the time or energy to pull off a multi-course meal.  Enjoy. Flourless (almost Paleo-ish) Peanut Butter Coconut Cookies

 Last week I made Quest-Style Protein Bars for the Crossfit NYC open WOD secret Santa.  This week Jameson drew our lovely, sweet fellow west-coaster, Kaylin.  Again Jameson was away in the midwest most of the week traversing state lines so I pitched in to help prep her gift.  I wanted to make her a treat to reward all the hard work she has put in during these grueling work outs, while still being mindful of overall healthiness.  I played around with my traditional cookie recipe to create this completely flour-less cookie that is as healthy as a cookie can be.  Better yet, you only need five ingredients to whip them up, and you only mess up one bowl in the process.  Thus prep and clean up is moderately effortless. American Thanksgiving: Homemade Curried Hummus

Lets just pause for a second.  Isn’t our street beautiful this time of year? (Mad photog props to Fab for snapping the above gem).  Our apartment may be winter ready and decorated for Christmas, but the rest of America still has fall and Thanksgiving to savor. Last month we hosted Canadian Thanksgiving which was such a hit (and left us with the most amazing left overs) that we opened our house once again to our family-less friends who were sticking around the city for the holidays.  We were so thankful to share the day with some of our best people. Now all that needs to happen to make this past weekend a recurrent theme is for Justin to ditch Chicago, and for Aaron to move back ASAP (thanks for understanding guys).

I switched up the menu a little to try some new things, but also stuck with our tide and true favorites.  Again, we kept things as vegan/Gluten-free/Paleo as possible with a few exceptions to the rule.  It is a holiday after all and we need to live a little.  The first of our festive eats is our Homemade Curried Hummus, which is no exception to any rule and pretty much free of everything.  The subsequent menu fed a plethora of hungry millennials with left overs to spare. Canadian Thanksgiving: (Vegan/ Gluten-Free) Curried Coconut Yam Casserole

Another treat from our Canadian Thanksgiving feast.  Again, this vegetable accompaniment is a staple for large gatherings in our home.  Actually, this dish extends well beyond our dinner table as it is my go-to dish when asked to bring something to my Aunt’s family meals.  You may recall that my aunt is one hardcore host, and that the meals she crafts are bar none.  In my family, once married along with your nuptials comes the responsibility of bringing an item to the table to share.  One best bring their A-game if they want to fit in with the rest of the exceptionally talented family members whose food never ceases to amaze.  On my first married Christmas Eve, I was asked to bring yam casserole. It seemed easy enough.  Although, I am not a very conventional girl so I didn’t want my dish to merely be the standard marshmallow topped, overly sweet, candy-esque variation of this dish.  So I began playing around with flavors and spices.  Truth be told my first version of this side dish had orange juice and it was thoroughly underwhelming.  It wasn’t awful but it wasn’t great either.  However, by the time Easter rolled around I had refined my recipe and this truly awesome vegan, gluten and sugar-free casserole was born.  So enjoy the fruits of my labour and have a happy celebration with those you love most.
