Creamy (Vegan) Summer Squash Soup

The amazing people of CF NYC teamed up to tell the story of my accident and how Crossfit has made a major impact on my recovery. The very talented Mead Jackson (check her photography/videography out and then follow her on Instagram) and Steve Gardner (he is found here, and on insta too!) told my story in such a meaningful way that it brought me (and my mum) to tears. I couldn’t be happier with the outcome. This is a story I keep very close to my heart, and the talented creatives who filmed this video made me feel so comfortable bravely sharing my experience with the world. Now many of you know that food and cooking has been as pivotal in my recovery as physical fitness has been. To highlight this other important aspect of recovery and wellness, Mead came over to get some footage of me cooking. I made up the recipe on the spot during the filming with what I could get my hands on at the Fort Greene Farmers Market that very morning. It may have been a hodgepodge, super quick lunch but it did not disappoint!  So without further ado I give you not only the awesome video, but this really awesome, really simple vegan soup recipe! {Vegan + Paleo} Smoothie Bowls

My mom came to visit in December toting a hometown favourite, granola from Pure Vanilla Bakery & Cafe.  I have ample warm, fuzzy, soul-filling memories in their cafe; from coffee dates with my mom to sitting on their patio with three of my nearest, dearest education friends, dreaming about our futures. So their granola is a little taste of home every time.  I decided to flex some creative muscles in how to make the most of my coveted granola; yogurt and granola just isn’t good enough.  Instead I whipped some smoothie bowls, whcih were fast, simple and perfect.  They’re also whole 30, paleo and vegan approved. A Whole 30 Friendly, Paleo Vegetable Frittata

Here is another gem from our Christmas Brunch. In January some of you may be doing the Whole 30 challenge. I know a lot of us at Crossfit NYC will be.  To learn more about the Whole 30 challenge head over the CF NYC website where they break it all down for you.  It is worth exploring.  If you decide to jump on board, we have a a few Whole 30 approved recipes to help you with your clean eating mission.  This savory frittata is yet another fast, easy meal that is also whole 30 friendly.  It doesn’t look like much but it requires minimal hands-on prep time. We were A Mummy Too’s Recipe of the Week this week!

I joke with Jameson that by classification the Jordan Project is pretty much a childless mama blog. Here at the Jordan Project we talk education, life and food which would all be more coherent if only a little one was on the scene. That way we would would fit better into the blogging niche of “parent blog”.  However, although kids are somewhere in the future, we are happy until then to keep bringing you learning activities and healthy, fast eats that fit into anyone’s busy schedule regardless of their parental status. Because it seems that you guys are LOVING what you find here, and that is all the incentive we need to keep it up!

As it turns out that it isn’t just our educational resources turning heads this month, but our whole food centrist recipes too! You may recall that our Halloween Bingo and Sight Word Go Fish games were showcased round the web in the past two weeks. While our amazingly simple, incredibly flavorful  Paleo Chicken, Lime and Avocado Soup was picked as  A Mummy Too’s recipe of the week. She also showcased our Butterbrickle Dessert and Vegan Pumpkin Spice balls! Our Pumpkin Chili was also selected to be one of her Fall Comfort Food’s of the weekA Mummy Too is a true parent blog, and an award winning one at that! Paleo Pumpkin Chili

 I may have never had a pumpkin spice latte (I know, the travesty!) but I have been all about the pumpkin this fall.  For Canadian Thanksgiving I whipped up some Pumpkin Spice Snickerdoodles and some Paleo Pumpkin Balls.  I am keeping the trend going with this rich and cozy fall chili.

Jameson and I spend our saturday mornings wandering the Fort Greene greenmarket in our neighbourhood, where we ogle (and consume) fresh scones, local cheeses and sugar coated apple cider doughnuts. This past weekend I constructed this in season chili recipe as I walked the lanes of the farmers market, picking out each veg.  Although this chili checks all the boxes with gluten-free, paleo and vegan options, we elected to accompany it with a loaf of brick oven sourdough from She Wolf Bakery. Vegan, No Bake Pumpkin Spice Balls

 This treat from our Canadian Thanksgiving has it all covered. They’re vegan. They’re paleo. They are gluten and dairy free. If you make them all with organic ingredients you can call them organic. This is a fast, simple, no guilt dessert or everyday fall treat. It also is right on the Pumpkin Spice trend. So enjoy being hip and healthy with these Pumpkin Spice Peanut Butter Balls.

Paleo Tuna Salad

The weather is warming up, and my desire to turn on my oven is going way, way, way down.  I love this time of year.  Summer in NYC is arguably my favourite seasons in the city.  During the summer months, so many organizations (like Lululemon or Athleta) begin hosting free events, to keep you busy, active and outside.  I love it! For example, yesterday was the start of the summer season of free yoga in Bryant Park (thanks yoga journal) which got me hot, sweaty and home late.  So when I stumbled through my door I wanted something quick, cool and nutritious to fuel my newly limber body.  This recipe for Paleo Tuna Salad takes under 10 minutes to prep (and consume if you are anything like Jameson or I) which was exactly what I was looking for.  This fast, inexpensive meal is not only a great post-work out pick me up but also an exemplary addition to your summer picnic basket. Paleo Coconut Macaroons

 I have mentioned again and again that life has been active for us these past number of weeks, resulting in an upswing of baking and cooking to calm my buzzing mind.  Work has been especially busy in the most wonderfully, engaging, dynamic way.  However, one of my amazing, spectacular colleagues is not only in the midst of our normal 9-5 routine but happened to also be smack in middle of hell week (the week preceding a show opening) for a musical she is producing.  There isn’t much I can do to share her load. However, the one thing I know how to do well is prepare food, and I have learned from experience that cookies quell a whole myriad of woes.  So with her in mind I began to adapt the traditional coconut macaroons to concoct this truly paleo, gluten-free version. Now for the most part my food is not the least bit Pinterest worthy. I focus more on the use of simple, whole foods rather than my photog and photoshop skills.  So needless to say I was a touch excited when these gems turned out to be perfectly pretty little domes. Paleo Fish Taco Bowls

We have a serious amount of life happening right now.  Everything seems to be moving at rapid pace.  We are also sitting on the cusp of some potential monumental changes, or simply solidifying that everything in our little ecosystem will stay exactly the same for a touch longer.   But right now we wait, and while we wait I have been trying to keep busy.  Thus I have been cooking, baking and talking non-stop.   Which just means you reap the rewards of new recipes, such as this awesome Paleo (or vegan if you choose) dish.  Try using this recipe as your base and customize any way you like by throwing in any extra veggies laying around in your crisper (broccoli is pretty darn great).   Experiment, enjoy, but most importantly take advantage of the approaching warmer temperatures. Paleo Shrimp and Sausage Stir-Fry with Kale, Broccolette & Homemade Peanut Sauce

I know I have mentioned the busyness of our everyday life recently, followed by sincere promises that we were still managing to cook all our meals from scratch and that it is merely lack of time that has kept me from sharing them with you.  However, we have been trying to intentionally slow our pace and carve out time for the things and people that matter. For me that has meant allocating ample time for concocting new recipes, as well as to photograph and pen them. It has also meant connecting with the friends we love most. Sometimes we combine the two. So last Friday our nearest and dearest, Jens, wasn’t feeling well, and I have also just been getting over a cold so we decided to pit in, cook dinner and watch the latest hunger games.
