Flour-less Chocolate Chip Peanut Butter Cookies

IMG_3548 When I started upping my recipe game again last week, my amazing, talented friend Joanna (the woman behind Wellness with Joanna) commented how happy she was to see me back in the kitchen. Her encouragement (always) means a lot since she is one bad ass healthy lifestyle powerhouse. If I can accomplish half of what she does when I am a mama of two I will consider myself a massive success. So with her prodding I  figured I would just keep all the new recipes coming your way instead of hoarding them on my computer.

This version of my cookie recipe came about after our (seriously wonderful) friend Sophia took a stab at my Flourless Peanut Butter Coconut Cookies. However, since the peanut butter she used was runny (or perhaps non-stablized) they didn’t firm up they way she had hoped.  Non-traditional/healthy baked goods can be finicky because when you are trying to cut ingredients out you are messing with the tride and true chemistry of baking.  Also, the texture and consistency of goods such as peanut butter vary wildly which impacts the overall product when you are skipping the flour.  So be patient with the product and be creative with the process. Anyhow, last weekend we had a lazy Sunday of church, binge watching the Jinx and baking.  This afforded me ample time to find a solution to Sofia’s predicament by adding a little PB2 to my dough.  However, during the process Jameson sweetly requested something with a hint of chocolate.  So I threw in some chocolate chips and the result was pretty great.  Enjoy! Banana White Chocolate Chip Muffins

Remember when this used to be a food blog and not just a chronicling of our city life? My apologies for the lack of posts (specifically food related musings) we have had a busy, full summer filled with weekends away, road trips and a new, amazing career for me. It has been such a blast. Jameson and I are both feel so recharged and refreshed after our first summer in NYC. I will get to documenting all of that soon, but for now here is some proof that I have in fact been whimsically whipping up new creations in my kitchen. Since Jameson is in Vegas at the moment celebrating the pending marriage of two very dear friends, these muffins come with the  sign of approval from three very trustworthy young men. Not only that but they are super quick to make, and only requires dirtying a single bowl (so it’s perfect for you urban readers whose kitchen real estate is less than robust). Enjoy. Chewy, Gooey, Ginger Molasses Cookies

I have officially worked my brain to capacity.  30+ peer reviewed articles and legal statutes later and I think I have enough knowledge to craft an adequate position paper on the martial rights of persons with disabilities (fingers crossed).  I have left a permanent impression of myself on my couch the past few afternoons as I have chipped away at my scholastic to-do list.  So what I need now is refueling, both mentally, creatively and physically.  Which is where these cookies come in. I have a basic cookie dough recipe I tend to use for the base of all my cookies and lately I have been craving ginger snap, so I decided to play around.  The result was fantastic on the first attempt.

Oh, and they’re vegan.

 

And another thing, the only real molasses in them is in the brown sugar. So they’re healthier than the traditional variation of this cookie.
