Jameson just started a new job with Johnson and Johnson (yay! go Jay!) and is back in full swing of constant travel. On the nights he is out of town I take the opportunity to experiment with new vegan recipes. Over the passing months I had been seeing a plethora of instagram posts of “Zoats” pop up in my feed and got curious. Now I must confess I don’t actually like oatmeal. What I do know it is an excellent source of fiber and trace minerals that aren’t commonly found in most foods but the struggle is real for me to eat it in any form but cookie form. So I figured I should step out of my comfort zone to try out Zoats (Zucchini+oatmeal) and see if I could wrap my palate around porridge. This treat from our Canadian Thanksgiving has it all covered. They’re vegan. They’re paleo. They are gluten and dairy free. If you make them all with organic ingredients you can call them organic. This is a fast, simple, no guilt dessert or everyday fall treat. It also is right on the Pumpkin Spice trend. So enjoy being hip and healthy with these Pumpkin Spice Peanut Butter Balls.
The weather is warming up, and my desire to turn on my oven is going way, way, way down. I love this time of year. Summer in NYC is arguably my favourite seasons in the city. During the summer months, so many organizations (like Lululemon or Athleta) begin hosting free events, to keep you busy, active and outside. I love it! For example, yesterday was the start of the summer season of free yoga in Bryant Park (thanks yoga journal) which got me hot, sweaty and home late. So when I stumbled through my door I wanted something quick, cool and nutritious to fuel my newly limber body. This recipe for Paleo Tuna Salad takes under 10 minutes to prep (and consume if you are anything like Jameson or I) which was exactly what I was looking for. I have mentioned again and again that life has been active for us these past number of weeks, resulting in an upswing of baking and cooking to calm my buzzing mind. Work has been especially busy in the most wonderfully, engaging, dynamic way. However, one of my amazing, spectacular colleagues is not only in the midst of our normal 9-5 routine but happened to also be smack in middle of hell week (the week preceding a show opening) for a musical she is producing. There isn’t much I can do to share her load. However, the one thing I know how to do well is prepare food, and I have learned from experience that cookies quell a whole myriad of woes. So with her in mind I began to adapt the traditional coconut macaroons to concoct this truly paleo, gluten-free version. Now for the most part my food is not the least bit Pinterest worthy. I focus more on the use of simple, whole foods rather than my photog and photoshop skills. So needless to say I was a touch excited when these gems turned out to be perfectly pretty little domes. Simple, one pot dinners are my jam. When we get home from the gym every night we are ravenous, and after we feast neither Jameson nor I have much ambition to tackle a lengthy clean up. So I am always looking to create flavorful meals that adhere to our dietary preferences, and can be accomplished quickly and painlessly. This soup meets all our lofty, stringent criteria. Also, if you are like me and don’t eat meat you can skip the chicken all together- it will still be spectacular. Or if you reside in a household (like ours) with a mix of herbivores and carnivores, simply cook the chicken in a pan on the side and stir into the soup when you add in your avocado. When I started upping my recipe game again last week, my amazing, talented friend Joanna (the woman behind Wellness with Joanna) commented how happy she was to see me back in the kitchen. Her encouragement (always) means a lot since she is one bad ass healthy lifestyle powerhouse. If I can accomplish half of what she does when I am a mama of two I will consider myself a massive success. So with her prodding I figured I would just keep all the new recipes coming your way instead of hoarding them on my computer.
This version of my cookie recipe came about after our (seriously wonderful) friend Sophia took a stab at my Flourless Peanut Butter Coconut Cookies. However, since the peanut butter she used was runny (or perhaps non-stablized) they didn’t firm up they way she had hoped. Non-traditional/healthy baked goods can be finicky because when you are trying to cut ingredients out you are messing with the tride and true chemistry of baking. Also, the texture and consistency of goods such as peanut butter vary wildly which impacts the overall product when you are skipping the flour. So be patient with the product and be creative with the process. Anyhow, last weekend we had a lazy Sunday of church, binge watching the Jinx and baking. This afforded me ample time to find a solution to Sofia’s predicament by adding a little PB2 to my dough. However, during the process Jameson sweetly requested something with a hint of chocolate. Last week I made Quest-Style Protein Bars for the Crossfit NYC open WOD secret Santa. This week Jameson drew our lovely, sweet fellow west-coaster, Kaylin. Again Jameson was away in the midwest most of the week traversing state lines so I pitched in to help prep her gift. I wanted to make her a treat to reward all the hard work she has put in during these grueling work outs, while still being mindful of overall healthiness. I played around with my traditional cookie recipe to create this completely flour-less cookie that is as healthy as a cookie can be. Better yet, you only need five ingredients to whip them up, and you only mess up one bowl in the process. Thus prep and clean up is moderately effortless. Happy Saturday! Lets just pause for a second. Isn’t our street beautiful this time of year? (Mad photog props to Fab for snapping the above gem). Our apartment may be winter ready and decorated for Christmas, but the rest of America still has fall and Thanksgiving to savor. Last month we hosted Canadian Thanksgiving which was such a hit (and left us with the most amazing left overs) that we opened our house once again to our family-less friends who were sticking around the city for the holidays. We were so thankful to share the day with some of our best people. Now all that needs to happen to make this past weekend a recurrent theme is for Justin to ditch Chicago, and for Aaron to move back ASAP (thanks for understanding guys).
I switched up the menu a little to try some new things, but also stuck with our tide and true favorites. Again, we kept things as vegan/Gluten-free/Paleo as possible with a few exceptions to the rule. It is a holiday after all and we need to live a little. The first of our festive eats is our Homemade Curried Hummus, which is no exception to any rule and pretty much free of everything. The subsequent menu fed a plethora of hungry millennials with left overs to spare. So, from our home to yours, Happy Thanksgiving!
Canadian Thanksgiving has come and gone, but luckily we Canadians live in America so we still have American Thanksgiving to look forward to. This recipe for Pomegranate-Blueberry Glazed Roast Turkey is my go-to for any meal intended to feed the masses. We hosted Canadian Thanksgiving a few weeks back where this dish was the main attraction. Next week, we will be cooking another bird for friends who remain in the city for American Thanksgiving, where again this recipe will take center stage. This non-traditional approach to prepping a turkey leaves you with a moist, succulent and flavorful meat that is always a hit. So be prepared to hide any remnants you want to keep for leftovers during your feast otherwise you may be disappointed to find nothing left once your guests depart. Another resource is up on the Yellin Center Blog, and this time is it for the Blends Bingo game I designed. This game aims to improve student’s understanding of different letter-sound relationships which are critical to the development of a child’s early reading skills. Mastery of this fundamental phonological awareness skill has been linked to overall success in reading decoding and comprehension.
I use this game primarily in special education and reading recovery settings. However, it can be easily adapted to a whole class environment. If adapting for a large group, it is important to note that every sound is on every card. Therefore, you should expect to have multiple winners at a given time. The reason every sound appears on every card is that this game was designed as a purposeful play activity. As such, Blends Bingo has the objective of each student participating by locating a new sound every time a new playing piece is drawn by the teacher. There is no waiting in this activity, and every child is able to continually work to manipulate sounds.

This activity was rather labor intensive to create due to formatting and finding images that clearly represented each sound. I understand how tough it can be to find copy write free materials, so for this game and most clip art infused resources I often use Classroom Clip Art. It is an affordable membership service, with a pretty robust selection of images that are education centric.
