We have been busy travelling, renovating, working and scheming. New York City is always a rush, but it feels as if life whizzing by with even greater fervor in the last few months. However, it is been all been the best kinds of busy. Our days have been brimming with birthday celebrations, weekend escapes, social events, holidays and long adventures. Tomorrow we set off with a few of our nearest and dearest for nine days in Costa Rica. We are living life and living it to the full. In the face of all the crazy, we are fulfilled and we are happy. That being said we have been mindful to take few moments to slow down and home cook some good, hearty fall meals. Which brings me to today’s newest recipe for a creamless creamed soup. I joke with Jameson that by classification the Jordan Project is pretty much a childless mama blog. Here at the Jordan Project we talk education, life and food which would all be more coherent if only a little one was on the scene. That way we would would fit better into the blogging niche of “parent blog”. However, although kids are somewhere in the future, we are happy until then to keep bringing you learning activities and healthy, fast eats that fit into anyone’s busy schedule regardless of their parental status. Because it seems that you guys are LOVING what you find here, and that is all the incentive we need to keep it up!
As it turns out that it isn’t just our educational resources turning heads this month, but our whole food centrist recipes too! You may recall that our Halloween Bingo and Sight Word Go Fish games were showcased round the web in the past two weeks. While our amazingly simple, incredibly flavorful Paleo Chicken, Lime and Avocado Soup was picked as A Mummy Too’s recipe of the week. She also showcased our Butterbrickle Dessert and Vegan Pumpkin Spice balls! Our Pumpkin Chili was also selected to be one of her Fall Comfort Food’s of the week! So there is nothing paleo or vegan about this dish, but trust me it is so worth the indulgence. I know, I know, I bragged that our Canadian Thanksgiving menu was filled with paleo, vegan and clean eats. But rules are meant to be broken, and this recipe is so worth bending the guidelines for. My justification for its inclusion is that every year without fail my super host of an Aunty preps some Mac and Cheese, because it is my cousin Graeme’s favourite side dish. Here is another recipe from our Canadian Thanksgiving. By sharing all my kitchen secrets, I am really ensuring all you Americans are ready for your feast in just over a month. Now baking isn’t always my area of expertise, and I find bread to be a tricky culinary pursuit. However, as soon as I discovered that I can turn my slow cooker into an almost bread maker I was sold. Not only are these buns low maintenance and simple but they are also super healthy. You can pronounce every ingredient in them, and unlike their store bought counterparts there are no added sugars. The new job is keeping me quite busy (and I am loving every second). The work is challenging and stimulating and exciting all at the same time. I am however still getting into a new life rhythm that juggles career, meal prep, exercise and cherished time with those who make my world go round. That being said by the end of my work day I am ravenous, thus resulting in a mad rush to prep, cook and get a healthy, mindful meal on the dinner table pronto. This curry accomplished just that. On top of the efficiency of this dish, is the added bonus there is still enough left over after dinner to pack up for lunch the following day (even for Jay and I who are notoriously large eaters). That being said, the hands down best aspect of this meal is it’s versatility. So regardless of the dietary restriction you adhere to you will be able to whip up a version that will leave you satisfied (and your house smelling simply delicious). So put away your seamless order, this curry is something you can handle yourself.

I love the suburbs (not that this is news to any of you). To take our uncool points to the next level, not only do I love suburbs but I adore small, university towns because I really, really, really like school. We Jordan’s make a point to stop at iconic college campuses wherever we go (even if it requires three extra tolls and an hour and a half detour on our Trans American road trip). So on Tuesday when Jay had a site visit to Connecticut I couldn’t stop myself from tagging along for the night to explore the picturesque Yale campus. With it’s cherry blossoms, crooked streets and ancient architecture it was nothing short of adorable. Add to our adventure that we stopped in Darien, CT, which easily could be described as the loveliest small town in America, and I would say it was a trip worth making.
Before we set out I had two meetings and a class to attend, which left little time to cook dinner. So in light of our pending getaway I kept dinner simple with this delicious, warm salad. Besides a little chopping of the cauliflower, radishes and avocado, the hands on time is minimal. So enjoy this fast, light spring dinner because this gem is not your traditional, mild mannered spinach salad.

My mom makes excellent paella. It is bar none one of her unsung talents. So last weekend when I was meal planning and missing her a little extra I decided to try my hand at it. Now she is the master, and I the student so I do not in any capacity feign superiority in my dish. I have watched her whip it up on several occasions, but what is tricky is that my mom happens to be a wiz in the kitchen so she never follows a recipe directly. Thus no paella is ever rendered the same again. It is a dish only to be enjoyed in that moment, because next time it will be equally as wonderful but slightly refined. So as I crafted my version I tried to think back on what I seen her incorporate, and then substituted in and out a few items to suit our palates (like quinoa instead of rice, extra veggies instead of meat and turkey sausage instead of chorizo). I am sure I missed plenty of ingredients but the result was nonetheless stellar. Furthermore, pausing to enjoy my take on paella on this sunny New York Spring evening, whirled up all sorts of nostalgia as it left my feeling as if I was sitting on my mom’s back porch catching up over our days. Clearly I am on a culinary roll this week. It is shocking what can be accomplished when I am facing of a daunting level of work, and thus in desperate need of a creative outlet. Today’s soup comes to you as an extra show of love for Jameson who has been so supportive and patient in the midst of all the crazy. Even taking the time to walk me around the Upper West side until 10:30pm last night as I breathed in the fresh air, cleared my head and tried to let go of the day. In the meal planning process I often tend to favor my dietary preferences, and rarely cook him anything with animal protein. So on days when I am feeling extra thankful for the emotional, physical and mental resource he is for me day in and day out, I tend to plan meals that have him in mind. What makes this soup extra special is that the chef can opt the meat in or out (or add it just to the carnivorous bowls at the end like we do), thus making it the perfect flex meal for differing palates and culinary restrictions. Meat or meatless you will still get ample protein from the black beans and the flavor isn’t hindered in either version. This is a substantial, hearty meal, so enjoy. Jay has returned to Canada (for the night)
This afternoon he set off for Montreal for work which means tonight he will spend his time snuggling Cotton (featured below. Just look at her sweet little hand on his neck. Isn’t he going to be a great Dad?!) and dineing with our friends the Stenbergs. Whereas, I on the other hand am cooped up our apartment navigating the complex world of personal taxes, writing up educational assessment reports and reading journal article upon journal article. It truly feels a like it has been a few days since I last came up for air. I figured since I am miles away, in the wrong country and can’t be with Jay to relish the company tonight, I may as well still savor a good meal. In the past I haven’t had much luck when it comes to tomato soups, as they often end up too bland or too runny. However, this fragrant tomato soup changed all that. No description would do this rich, flavorful soup justice. So I will merely leave it to you to test for yourself.
When midterms are in full swing, so is my culinary prowess. It is my best procrastinator and my biggest relaxation strategy. During the chaos of graduate school it seems that I can barely find the time to check my e-mails, but I always have time to bake cookies in mid afternoon. Add to that that proper nutrition fuels the brain and energizes the body and you will understand why there have been a plethora of new recipes on the blog these past weeks (with more to come).
Today’s recipes arrives in Celebration of St. Patricks Day. To be honest I have never even put much thought into this holiday before, let alone celebrated. In St. Patricks Day’s prior you would find me doing little more than donning a green cardigan while teaching an Irish themed art project. However, New York takes it’s St. Patty’s day very, very seriously. As such I made time to get together with friends and enjoy the festivities. We ventured down into the madness that is Times Square, tucked ourselves into a warm, cozy booth in an Irish Pub and spent our time watching the parade, eating potato leek soup and sampling a variety of beers. Good times were definitely had, but its is hard not two when the afternoon is spent with two of my absolute favorite New Yorkers.
Afterward I polished off the evening with this homemade, hearty bowl of greens. So whether you are feeling thematic or in need something scrumptious to recover from your weekend of Irish induced debauchery -Enjoy.
