So as you can probably tell I couldn’t make up my mind, which led me to make not one, but three holidays desserts for Canadian Thanksgiving. I have already highlighted my (and seemingly everyone else’s) favourite ice cream treat, Butter Brickle, as well as a vegan-paleo options in my Pumpkin Spice Balls. So today I bring you Pumpkin Spice Snicerdoodles. With the inclusion of real purréd pumpkin, these cookies have a soft, almost cake like texture. Another recipe from our Canadian Thanksgiving is here! I know I gushed about how thankful we are for our NYC family, but that in no way means I didn’t miss my own family over the holiday weekend. It is an exciting time for my most precious people. One of my best friends/maid of honour (who is married to my cousin) is expecting their second babe any minute now. There are more pregnancies and brand new babies for some of my most cherished friends and family. My brother just got engaged (and KILLED the Victoria Half marathon). So there is so, so much to celebrate right now. So to make me feel a little closer to home I tried to emulate my Aunt’s fantastic Thanksgiving feast the best I could. So first an aside: I am sitting here watching the new show on fox, Gracepoint. It is a pretty good show if you’re into crime dramas, but my main motivation for watching is that seeing my city on the screen fills me with even more hometown pride (I know you didn’t think it was possible I could love Victoria even more but rest assured there are no limits on my affections). But then right this very second the whole experience just got even better (and my homesickness got a touch worse) because the filming location for the house of the main characters is three doors down from our house in Victoria. Meaning I just glimpsed the corner our yard on television. I mean that makes us practically famous right?
Okay, I will stop my over-exuberant nostalgia and get down to business. Pumpkin Cheesecake. Apparently, everyone loves pumpkin everything this fall. So this recipe from our Canadian Thanksgiving Feast is right on trend. This was one of the non-vegan, non-paleo and full gluten dishes. Because really dessert should just be decadent. It also happens to be super simple and more or less fool proof, while appearing complex and labor intensive. Enjoy!
Remember when this used to be a food blog and not just a chronicling of our city life? My apologies for the lack of posts (specifically food related musings) we have had a busy, full summer filled with weekends away, road trips and a new, amazing career for me. It has been such a blast. Jameson and I are both feel so recharged and refreshed after our first summer in NYC. I will get to documenting all of that soon, but for now here is some proof that I have in fact been whimsically whipping up new creations in my kitchen. Since Jameson is in Vegas at the moment celebrating the pending marriage of two very dear friends, these muffins come with the sign of approval from three very trustworthy young men. Today’s pint sized chef is cuter than buttons. This little sweetheart mixing up a batch of our Chocolate Drop Cookies left me with a perma-grin and amplified my baby fever to a new pinnacle. As you know we have been church hunting non stop since arriving in NYC. Then alas through Crossfit Jay met an exceptionally wonderful girl who invited us out to church. Thanks to her generous and inclusive spirit we have cultivated the most exceptional church family, and met people that really have changed how homey New York feels. Every other Thursday there is a bible study, but I have been cooped up in a lecture hall every Thursday night this semester. So it is with great excitement that I exclaim that tonight is my first evening of freedom to enjoy the company of those we have come to hold dear. Horray! So naturally with two finals and three summer classes stand between me and mastering all of education I decided to bake cookies for tonight rather than crack a textbook (It seems to be a theme this year). Some moments are for life. This weekend was one of those moments. We filled our days with good Friday services at Hillsong, coffee dates in Greenwich Village, Easter Sunday services, bocce in Fort Green park, potlucks in Brooklyn and the most exceptional, imperfectly perfect people. So although this was our first major holiday without family (and we missed them bundles), we consider ourselves truly blessed to be able to spend it the way we did and with whom we did.
My contribution to our Easter potluck was Cilantro Lime Bean Salad, peanut butter cookies and Naniamo Bars (get excited fellow Canadians). Being from Vancouver Island, Naniamo bars to me are ubiquitous with cupcakes, cookies and brownies. So naturally upon moving to NYC I figured everyone had been enlightened to their awesomeness. I was shocked, no, I was horrified to learn that even my fellow Torontonians had no idea what I was babbling about. So this Easter potluck I set out to rectify that atrocity by trying my hand at what for me I had always considered a super complex dessert (I prefer simple, no fuss no muss baking that reaps rewards quickly).
My dear friend Alyssa, filled me in on her little tip that if you place each layer in the freezer for 30 minutes it makes the processes a little more seamless. So with that in mind I decided to stick to the basics and took the recipe right off the city of the Naniamo website (although I couldn’t help but throw in a few of my own twists), and after one batch of burnt chocolate and a forgotten egg in the first crust I alas mastered these delicious treats. However, my sincerest apologies because in terms of food photography this post gets a below failing grade, only because we were having too much fun enjoying our company to craft a pretty picture (and Jay had to cut the bars with a spoon because I forgot a knife. So it’s official. I have a cookie problem. One that I cannot even dignify with a valid defense. Midterms kicked it into high gear, and the job hunt has fueled the fire. The evidence against me has been building up over these last few with post after cookie post, so now all I can do is admit it. I love cookies, and these peanut buttery treats are no exception. The inspiration for this batch came via the fact that my mom is visiting my grandparents and I am not so secretly wishing I was back on the west coast with them all. My grandma makes hands down, the best peanut butter cookies known to the human race. So I tried my hand at a version, that is vegan, and isn’t too loaded with anything that will kill you. I have been feeling a touch overwhelmed with the everyday, mundane demands of life as I juggle graduate school, teaching, job hunting for the fall and figuring out what comes next; all well striving to quell a bout of homesickness that has resurfaced after having to say good bye to our two sets of wonderful family who just left NYC. I now it is all going to turn out, and that given time I will have answers to all the questions I am seeking. However, nonetheless in times when my nerves feel a little more frayed than usual, and my normal disposition of moderate over thinker is on overdrive I am diligent to carve out time to cook or bake. It is how I combat stress. So today I bring to you a batch of Vegan cookies that are as simple and they are quick to whip up. Thus allowing the baker to promptly return to their lengthy list of tasks that need accomplishing or those journal articles sitting on their desk unread. But before you return to everything that awaits, take some times to unwind by prepping (and eating) these cookies that Jay swears may just be the best he has ever eaten.
