Creamy (Vegan) Summer Squash Soup

The amazing people of CF NYC teamed up to tell the story of my accident and how Crossfit has made a major impact on my recovery. The very talented Mead Jackson (check her photography/videography out and then follow her on Instagram) and Steve Gardner (he is found here, and on insta too!) told my story in such a meaningful way that it brought me (and my mum) to tears. I couldn’t be happier with the outcome. This is a story I keep very close to my heart, and the talented creatives who filmed this video made me feel so comfortable bravely sharing my experience with the world. Now many of you know that food and cooking has been as pivotal in my recovery as physical fitness has been. To highlight this other important aspect of recovery and wellness, Mead came over to get some footage of me cooking. I made up the recipe on the spot during the filming with what I could get my hands on at the Fort Greene Farmers Market that very morning. It may have been a hodgepodge, super quick lunch but it did not disappoint!  So without further ado I give you not only the awesome video, but this really awesome, really simple vegan soup recipe! Homemade Chocolate Chip Cookie Dough (Quest Style) Protein Bars

 It is the last weekend of the Crossfit Open and thus the last Crossfit NYC comp team gift exchange.   The entire team has been unreal these past five weeks, so they have each earn their treats each week.  This week Jay drew one of our all time favourite people, Sofia.  I decided to play around with my protein bar recipe to see if I could make a copy cat Chocolate Chip Cookie Dough Quest bar at home (and subsequently fuel my problematic addition to these bars). Flourless (almost Paleo-ish) Peanut Butter Coconut Cookies

 Last week I made Quest-Style Protein Bars for the Crossfit NYC open WOD secret Santa.  This week Jameson drew our lovely, sweet fellow west-coaster, Kaylin.  Again Jameson was away in the midwest most of the week traversing state lines so I pitched in to help prep her gift.  I wanted to make her a treat to reward all the hard work she has put in during these grueling work outs, while still being mindful of overall healthiness.  I played around with my traditional cookie recipe to create this completely flour-less cookie that is as healthy as a cookie can be.  Better yet, you only need five ingredients to whip them up, and you only mess up one bowl in the process.  Thus prep and clean up is moderately effortless. Canadian Thanksgiving: Homemade Cranberry Sauce with Ginger and Pear

We all know how much I love to host, and that I jump at any opportunity to fill my home with those I cherish most.  So needless to say I wrangled 15 of my nearest and dearest to come celebrate Canadian Thanksgiving with us.  Since moving to NYC I have only gotten more patriotic so naturally I love showcasing some of our Canadian culture (even if Canadian thanksgiving is merely a carbon copy of the American version save for the pilgrims and Plymouth rock). This year we were so, so fortunate to have two very exceptional Canadians in town visiting, bringing the Canadian representation up to five speculator people.  We love guests, and getting a chance to connect with Rachel and Courtney was a real treat (thanks guys for playing with us!)

We had an amazing time eating ourselves into a turkey coma while savoring the exceptional company.   Now undertaking an entire turkey feast is always a touch daunting because I have spent every Thanksgivings at an my aunt’s home.  So this year not only was I longing to be there to snuggle all the new babies, but I was very rightfully concerned that my meal just wouldn’t be up to snuff.  That woman knows how to host something fierce, and so the bar of excellence has been set high.

However, I managed to pull out a meal that was lauded by everyone.  Not only was everyone angling for seconds (the highest form of praise) but is was a super healthy supper that met all the varying dietary needs of our beautiful guests. As such, most of the dishes were either vegan, paleo or gluten free.  I will be be sharing a bunch of these recipes over the course of the next few days and weeks (some Americans you can steal them for your approaching Thanksgiving feasts).   Furthermore, I would also like to give myself some self praise in that this was the first time I tackled homemade bread and cheese cake without my Kitchenaid mixer (which is safely stowed in storage back home) which is no easy feat.  This whole meal was prepared from scratch the tech-free, old school way.  So needless to say I got my upper body workout in. Overall the meal was a success, but by far the brightest part of the evening was being surround by our New York family.  Although it didn’t completely erase my homesickness for those back home, at least my heart and home was filled with so much love nevertheless. 6 month-versary: A Few of our Favourite (NYC) things

This post is a touch overdue, but nonetheless it is hard to believe that it has been over six months since we packed up and set off for Manhattan.  These past months have been some of the most exciting, invigorating, and stretching of our young lives.  Jay just flew home from a Boston to Miami to Colorado Springs to Virginia business trip, and as we sipped green tea on the floor of our kitchen catching up on our week apart we began reminiscing about this unbelievable journey we are on.  It is cheesy, and mushy and painfully cliché but we are both so wholly in love with our life.  We are in agreement that no matter where life takes us next, we will always look back on our time in New York as one of the best, most exciting, most spine tingling spectacular seasons of our marriage.  We are in awe of the growing that has happened in us individually and together.  So in love with the friends we have made here.  So inspired by the art and community we have been able to soak in.  Don’t get me wrong, it hasn’t all be rosy.  Uprooting and replanting has had its fair share of adjustments and longings as well, but slowly, over time those have turned out to be a beautiful reformation process for me.  I have a cherished New York friend (who I would be lost without) who has lovingly and thoughtfully listened to me voice all my concerns and worries in painfully rich detail and on repeat.  She told me it has been such a joy for her to watch my little mind expand as my vision for our future grows.  The result is that now as we move forward to the rest of our time in NYC, to graduation, to job hunting and to family planning we go with an even more open heart, broadened minds and a whole bundle of faith that what comes next will be equally as amazing.

Christmas in the City

Next week we will be jetting back to the island to enjoy the Christmas season with family and friends back home.  However, before that happens we have been taking full advantage of Christmas in our new home.  The holidays in the city have a little extra sparkle and a dash more whimsy than anything I have previously experienced.  The lights begin being hung around mid November and by the time Thanksgiving comes around almost every street is adorned with silky red bows and fragrant evergreen wreaths.  It is beautiful, and even the grinch-iest of grinch would have a hard time not warming to the Christmas spirit this city emits.

Currently I am in the midst of finals insanity in a way only grad school can muster.  However, Jay and I have been taking study breaks to explore the festive undercurrents of New York City.  Below I have chronicled some of our top holiday highlights.  Warning this list is long and only scratches the surface of holiday offerings this city provides.  There just may need to be a Christmas in the city 2.0 post to follow.
