This is a fast, simple, no guilt dessert or everyday fall treat. It also is right on the Pumpkin Spice trend. So enjoy being hip and healthy with these Pumpkin Spice Peanut Butter Balls.
Vegan, Paleo, Gluten-Free No Bake Pumpkin Spice Balls
Ingredients
- 2 cups of coconut flour
- 1/4 cup of date syrup
- 1 tbsp pumpkin pie spice
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 1/4 cup of nut butter of your choice
- 1 tbsp of water (if needed)
- Cinnamon and granulated sweetener of choice (optional)
Directions
- In a large mixing bowl combine coconut flour, date syrup, pumpkin spice, pumpkin puree, vanilla extract. peanut butter and water. Continue to mix (adding water if needed) until a firm dough is formed. (add more pumpkin if dough is too dry, or add more flour if dough is two wet)
- Roll table spoon sized amounts into balls and roll in a mixture of cinnamon and sweetener
- Store in an air tight container in the fridge until ready to serve
